I've been doing a lot of cooking this week...muffins, sweet potato coconut chili soup with Thai basil pesto, and panzanella so far. This is because I am preparing to give up dairy for a few weeks, and am starting in on vegan recipes. I used to know a vegan and I thought she was semi nuts, but now that I have two awesome vegan cookbooks, I see how great it could be. Except for two words: no pizza. We'll see how it goes.
